Chorizo Rice Bowl

You Will Need:

1 lb. Rock House Farms pork chorizo

2 cloves garlic, minced

1 sweet onion, diced

1 Roma Tomato

1 cup corn, fresh or canned

Chopped fresh cilantro

1 lime

3 cups cooked rice

Optional : Sour Cream and Guacamole

Brown one pound of chorizo along with 2 cloves of garlic and one sweet onion. While it’s browning, slice up a Roma tomato. Add in the tomato along with 1/2 to a full can of drained corn (black beans would’ve been so good here too but I was out) and cook until the tomato looks soft. Turn off the heat and sprinkle in some chopped cilantro.

For the rice : cook according to package directions or your favorite way. Add in 1/2 fresh squeezed lime and some chopped cilantro and fluff your rice.

Create your bowl and add your favorite toppings! We added sour cream and some guacamole 👌🏼 Every kid was asking for more!
