Buttermilk Biscuits
You Will Need:
2 cups of buttermilk
2 sticks of butter
4 cups of all purpose flour
1 TBSP sugar
1 tsp baking soda
4 tsp baking powder
1 tsp salt

Preheat your oven to 400 degrees. Next, measure out your buttermilk and set the cup into the freezer. You want it to be very cold. Melt your butter in a dish and set aside to cool. Add all of your dry ingredients to the bowl and whisk. After the buttermilk has been in the freezer for a few mins, take it out and pour your butter in. Use a fork to mix/whisk it in and it should turn thick and the butter will form into little balls. Pour the buttermilk/butter mix into your flour mixture and fold until just combined. It should be pretty soft but held together. Flour your counter top and pour your dough out onto the floured surface. Knead your dough a few times until it sticks together good. Be careful not to over mix or your dough will be tough. Use your hands or *gently* use a rolling pin to spread the dough out so that its about 3/4 of an inch thick. Use a biscuit cutter to cut your biscuits and set your them into a large cast iron skillet (or two small... or just a spray sheet pan). You'll have a good bit of dough left after you cut your first round, so gently mix it back together and cut again. Just keep in mind that each time your bring your dough back together, it will get more tough. So be as gentle as possible. Once you've got them all cut, bake for about 12-18 mins (depending on your oven) or until golden brown on top. When they're done, like to brush to tops of mine with melted butter! I hope you enjoy!

I've used several different sized biscuits cutters for this same recipe and they always turn out great. Sometimes we have fewer larger biscuits and sometimes we have smaller biscuits. This recipe makes around 15-20 small biscuits. You can definitely cut the recipe in half for a smaller batch!
